
Chorizo Nachos

Ingredients
- 1/2 bag Local La Nina Tortilla Chips
- 1/2 cup Dei Fratelli medium Salsa
- 2 each Local North County Smokehouse Chorizo
- 1 each Fresh jalapeno Sliced and deseeded
- 1 each Avocado Cubed
- 1/2 cup Scallions Chopped
- 1/2 cup Cilantro Chopped
- 7 oz Sharp Cheddar Grated
- 7 oz Montery Jack Grated
Instructions
- Preheat over to 400F
- Slice chorizo in rounds and saute slowly in a cast iron so it releases it's own fat (or in a regular saute pan with just a bit of olive oil) 5-7 minutes until fully warmed through. Remove and place on papertowel to absorb any extra fat.
- Arrange tortilla chips on a cookie sheet with some parchment underneath. Top with chorizo, grate cheese over the chips and chorizo and bake for 7 minutes
- Meanwhile, slice jalapenos and take out the seeds. Slice scallions and cilantro. Remove nachos from oven and top with dollops of salsa, jalapenos, scallions and cilantro.
- Bake for 3 more minutes. Serve nachos as is or top with your favorite topings such as: sour cream & chopped avocado.
Notes
Serve with or without cheese to make this a dairy-free treat!
