
Raw Beet and Walnut Slaw
Raw winter veggies make an abundant treat to make in January that you will miss in the summer months.
Ingredients
- 1/2 finely chopped red cabbage
- 1 shredded raw beet
- 1 shredded large carrot
- 1 cup walnuts
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp Olive Oil or oil of your choice
- Salt & Pepper to taste
Instructions
- Combine all ingredients together and dress the slaw. Let sit overnight for flavors to meld together. You can serve immediately too if in a pinch for time.
