
Shrimp Lettuce Wraps
Ingredients
- 1/2 lb peeled and deveined shrimp tails removed
- 2 tbsp fresh cilantro, split in 2
- 1 tbsp grated garlic
- 2 tbsp chopped scallions
- 1 tsp crushed pepper flakes
- 1 lime and zest
- 1 head hydroponic Boston lettuce
- 1 carrot shredded
- 1 tbsp olive oil
- 1/2 cup grape tomatoes halved
Instructions
- Marinate shrimp with 1tbsp olive oil, lime zest and juice of half the lime, chili flakes, ginger, garlic, 1 tbsp of fresh cilantro for 15-20 minutes
- Saute marinate shrimp in a non-stick pan with the marinade until shrimp is cooked through
- Add scallions and give it one more toss, do the same with carrots
- Spoon shrimp into lettuce leaves and drizzle with lime juice to taste and garnish with cilantro leaves.
